- ¼ cup ketchup
- 2 Tbs. Worcestershire sauce
- 2 Tbs Heinz chili sauce (or anything spicy, even Tobasco sauce)

- 1/8 tsp. Ground chile pepper powder or cayenne pepper to taste (or you may use Tabasco sauce for a slightly spicier flavor), or ½ – 1 oz. Fresh chives, minced fine.

The ideal temperature range is between 240 to 250 degrees Fahrenheit. If it is too cold, turn the heat up slightly.
5. When the mixture reaches this temperature, it will be bubbly. Turn heat down slightly and let cook for about 2 minutes longer, still stirring constantly. (At this point, you can add any other spices or seasonings you may desire.) Once it has reached the proper temperature, please remove it from heat and cool it for a minute or two.
6. Pour into glass jars to fill about ¾ of the way up with waffle house sauce mixture.
7. Cap the jars. This will help prevent the waffle house sauce from separating.
8. Refrigerate if needed.
Makes 1 7/8 cups of waffle house sauce or 3/4 cup per jar, or 2 cups per jar if split between two jars. Be sure to refrigerate before eating, as it will not be safe to eat at room temperature (it will separate).
